Easy Easter Dessert Recipes

Easter is a great time to think about pastels and flowers all around us. The brighter sun of springtime makes everything around us feel brighter. Why not make the desert you serve this time bring the same feeling. A great dessert for this time of year should leave you feeling satisfied but not be so heavy you feel overly full. These recipes are favorites of mine and will make a perfect ending to your Easter dinner.

Chocolate Brownie Trifle

One bag prepared brownie mix (family size)
One bag toffee pieces
Two containers of Cool Whip® topping
One large box of Jell-O® instant chocolate pudding
Three cups cold skim milk
Strawberries (optional)

1. Follow the directions on the box of brownies. You'll want to bake them at 350 degrees for the amount of time suggested.
2. While your brownies are baking whip up some pudding by adding cold skim milk. Put this mixture in the refrigerator.
3. Before you do any cutting let the brownies cool completely when they come out of the oven.
4. If you don't have or own a trifle bowl then improvise by using a large plastic container.
5. Here's how you put the trifle together:
place brownies at the bottom, then the whipped topping, then the chocolate pudding, and then the toffee pieces. Keep layering the ingredients until everything is gone. Save some whipped topping to cover the top of the desert.
6. Sliced strawberries arranged on top decorate it nicely. Refrigerate until ready to serve.

Easter Sugar Cookies

One or two packages Pillsbury® sugar cookie dough
Cake icing in pink, white, and yellow
Easter cookie cutter shapes (eggs, chicks, bunnies, flowers)
Assorted candy sprinkles
One cup of all-purpose flour

1. Let the dough sit out until its room temperature. Roll the dough out on a cutting board that is floured. Roll it into 1/4 inch in thickness.
2. Cut out the cookies using the shapes.
3. Bake on an ungreased cookie sheet for seven to ten minutes at 350 degrees (or following the directions on the dough).
4. Let the cookies completely cool before icing them.
5. Using icing and sprinkles decorate the cookies.

Children have lots of fun helping to make deserts. Let them help with mixing up ingredients, placing the cookies nicely on a platter and serving them up to family and guests. Also, serve coffee with the chocolate brownie trifle to cut the sweetness. Both of these desserts are light, but satisfying.
