Another great baked veggie dish that will bring a smile to the faces of everyone at the family dinner table! Yummo!<\/p>\n

Ingredients:
\n2 zucchini, sliced
\n12 oz. tomato sauce
\n3 cups Rigatoni
\n6 oz. Mozzarella cheese, sliced
\n1 tsp olive oil
\nHandful of shredded cheese<\/p>\n

Method:
\nPreheat oven to 350F. <\/p>\n

Cook pasta according to package instruction, then set aside.<\/p>\n

In a small saucepan, boil a small amount of water. Add zucchini and cook until tender. Grease a baking dish and layer 1\/3 of the Rigatoni, tomato sauce, cheese and zucchini. Continue layering until you have three of each. Cover with shredded cheese and add a sprinkle of olive oil. <\/p>\n

Bake in the oven for about 30 minutes or until cheese is melted.<\/p>\n
