One of our family’s all time favorite quick meals is Chicken Fajitas. We almost always have the ingredients needed in the fridge and pantry so it’s great for those nights when you realize you forgot to pull the roast out of the freezer or need to whip up something quick when another family stops by.

The ingredients are flexible but here are the basics:
Chicken breasts (I keep some precooked strips in the freezer so I can just pull them out, heat them up and voila) seasoned with some cumin and chili powder. Cut into thin strips.
Flour tortillas (these keep great in the freezer too) – heat in oven, on stovetop in a skillet or in your micro
Red and green bell pepper strips, we stir fry ours in some extra virgin coconut oil – yummy!
you can add sliced onions to this mix too if you like them.
shredded lettuce
sour cream
shredded sharp cheddar cheese
salsa and/or diced tomatoes
guacamole

We throw everything out on the table and let everyone build their own from there. Slather some sour cream down the middle of the tortilla, add some meat and top with other toppings. Fold up the bottom and each side in like a baby blanket and you’ve got a quick yummy and healthy dinner.
