(Makes about 3 cups)

2 tbsp butter or oil
3 tbsp flour (whole wheat or white)
2 cups milk, vegetable stock or water
1 cup ground toasted nuts (any kind)
Salt and pepper to taste

Heat the oil or melt the butter in a saucepan. Whisk in the flour and stir constantly for about one minute. Remove the saucepan from the stove and allow to cool for about 2 to 3 minutes. Return to heat and whisk in the milk and the ground nuts. Simmer and stir for about 3 – 5 minutes until mixture thickens.

Add salt and pepper to taste and serve hot with your favorite veggie roast.
